Vegan cake looking this good? ( I think I’m allowed to say that – I’m really proud of this latest creation of mine!)

Yes you can eat 100% of it – including ALL the flowers which are vanilla infused dairy-free buttercream. And yes, it’s a 100% vegan cake…! Many people are still flabbergasted that these floral beauties I make are totally vegan cake (well, correction:  this is a vegan birthday cake although my lovely customer didn’t want any message piped on the cake).

It’s my latest Floral Wreath Cake – and it’s one of my absolute favourites 🙂 (I know, I always say that when I make something new…but I just fall in love all over again!) The cake is a vegan coffee & hazelnut cake, covered and layered with delectable coffee dairy-free buttercream (that frosting tasted divine…of course I get to eat ALL the leftovers – mind the waistline!)… topped with a delicate hand-piped flower arrangement. And that’s why it’s called a floral wreath cake…because of the way the flowers sit on the cake in a pretty ‘wreath’ style. I remember when I told a friend about my vegan floral wreath cakes and she thought it was like a bundt cake with a hole in the middle! Well, you can’t actually blame her for thinking that now, can you? But if it was a bundt type cake, then you’d kind of feel a bit cheated when there’s a hole in the middle of it. Well I would anyway. Although I suppose I could do a wreath style cake for Christmas, the one with the hole in the middle…

All the flowers are hand-piped (by yours truly) with a vegan buttercream substitute. It takes a lot of meticulous planning and thought process to make a cake like this – you can’t just simple decide you’re going to make one and then ‘throw’ it all together.  There’s a few hours of thought process that goes into it: researching, thinking about colour scheme, the type of flowers, the size of flowers, the arrangement of the floral wreath and the buds and foliage if any. Basically, it is a lot of blooming work! However, these cakes HAVE to be a real feast for the eyes (as well as the tastebuds).

So, if you want to spend that little bit extra on something luxurious, it’s absolutely worth it. It’s a work of art as well as cake. And as everyone always says, it’s a shame to eat it!
